Ovaj rekombinantni enzim hidrolizuje proteine (serumski albumin, kolagen) i sintetičke supstrate (Z-Phe-Arg-NHMec > Z-Leu-Arg-NHMec > Z-Val-Arg-NHMec)

Katepsin V je ljudska lizozomalna cisteinska endopeptidaza iz familije C1 (papainske familije) koja je maksimalno aktivna na pH 5m7 i nestabilna na neutralnom pH.
